Squash (Cucurbita pepo, C. maxima, C. moschata, C.
mixta) - Squash is thought to have originated in North
and South America, but actual locality is not really
known.  The name squash is derived from the
corruption of the Indian name ascutasquash, which
means gourd, and were most likely tropical vines.  
These tender annuals are commonly divided into two
groups winter squash and summer squash.  Winter
squash has a thick skin that enables long term storage
and is usually stored for up to 4 months.  Summer
squash is typically harvested when immature and used
fresh, canned, or frozen.
